The biggest mistake people make with high-quality pork chops is overcooking them out of habit, which dries out the lean loin meat. Because free-range pork has excellent fat distribution, you want to treat it more like a premium steak.

Render the Fat Cap First: Don't just lay the chop flat in the pan right away. Use tongs to hold the pork chops upright, fat-side down, in a hot cast-iron skillet for 2 to 3 minutes. This renders out the delicious natural pork fat, crisping up the edge and creating a pool of flavorful oil to cook the rest of the chop in.

The Butter Baste: Lay the chops flat and sear for about 3 to 4 minutes per side to get a deep, golden crust. In the final minute of cooking, turn the heat down, throw a large knob of butter, a crushed clove of garlic, and a sprig of fresh rosemary or sage into the pan.
