Our rolled rib of beef offers characteristic marbling running through the meat which gives our beef its outstanding flavour and natural succulence upon roasting. Exclusively sourced from grass fed herds, this robust, meaty joint is aged on the bone, before being skillfully boned and rolled specifically for a celebration joint of the highest quality.

Primrose Herd's beef is only from the best local, grass-fed Cornish cattle leading to the highest of quality beef, whether it be steak or roasting joint.

All Primrose Herd beef is supplied fresh, butchered to order, vacuum packed and shipped in recyclable packaging.

👨🍳 Chef’s Secret Tip

For a rolled Rib of Beef, the secret is "The Carry-Over Cook." Always remove your roast from the oven when the internal temperature hits 48°C (for Medium-Rare). As the meat rests, the internal heat continues to cook the center, raising the temperature by another 5°C to 7°C to reach a perfect pink finish.

Pro Tip: Rest the roast for at least 20–30 minutes before removing the strings and carving. This keeps the juices locked inside the meat rather than on the board.
