👨🍳 CHEF’S SECRET TIP Because Topside is a lean muscle, it is best served Medium-Rare. To keep it incredibly tender, sear the outside quickly at a high heat to lock in juices, then lower the oven to 160°C. Most importantly, slice it across the grain as thinly as possible to break up the muscle fibers for a "melt-in-the-mouth" feel. Pro Tip: Topside makes the best roast beef sandwiches the next day. Wrap the leftovers tightly in foil while still slightly warm to keep the moisture trapped in the meat. |
