The original name may be derived from the Arabic word Kaskasa, meaning "to pound small" or the Berber Seksu, meaning "well rolled", "well formed", or "rounded".

Consisting of many tiny granules made from steamed and dried whole-grain durum wheat, couscous has become a popular alternative to rice and pasta.

It has a light, fluffy texture which is a little bland in flavour, but which readily soaks up the flavours of other ingredients.

Couscous may also be used to make a breakfast tabbouleh salad. Though usually cooked in water, it can also be cooked in another liquid, like apple juice, and served with dried fruit and honey.
