"People often ask me why I created a specific Spring Veg version of our Piccalilli. The answer is simple: Texture. Most commercial piccalillis use 'filler' vegetables that go soft in the brine. By using early-season Spring vegetables, we get a much higher water content and a thinner cell wall, which results in a far superior 'crunch'. We hand-dice the veg slightly larger for this jar specifically to preserve that fresh-from-the-garden snap. When you pair that crispness with the warmth of our turmeric and mustard sauce, it creates a contrast you just can't get with standard year-round produce. It's Piccalilli exactly how it was meant to be."
